Calypso hops are an American hop variety developed by the Hopsteiner breeding program in Washington State, USA. They were released in 2011 as a dual-purpose hop, making them suitable for both bittering and aroma additions in brewing.

Calypso Hops Flavour & Aroma Profile:

  • Aroma: Calypso hops have a complex aroma profile, characterized by notes of apple, pear, and stone fruit, along with hints of citrus, such as lemon and lime. They also exhibit some tropical fruit, herbal, and minty tones, which add to their overall complexity.
  • Flavour: When used in brewing, Calypso hops contribute a smooth bitterness and a range of fruity flavours complementing the aroma profile. Expect flavours such as apple, pear, citrus, and tropical fruits, along with subtle herbal and minty notes.

Calypso hops are well-suited for use in various beer styles, such as American Pale Ales, IPAs, Saisons, and wheat beers, where their unique character can add depth and complexity.

Calypso Hop Pairings:

When pairing Calypso hops with other hop varieties, consider the following options:

Citra: An American hop variety known for its strong citrus and tropical fruit flavours. Pairing it with Calypso can enhance the fruitiness and complexity of your beer, making it suitable for modern Pale Ales and IPAs.

Mosaic: This hop variety is known for its fruity and floral flavours, including blueberry, tangerine, and rose. Pairing it with Calypso can create a unique and layered fruit-forward hop profile.

Amarillo: Another American hop variety, Amarillo offers strong citrus and tropical fruit flavours. When paired with Calypso, the combination can create a bright, fruit-forward character in various beer styles.

Simcoe: With its piney, citrusy, and earthy flavours, Simcoe can provide an interesting contrast to Calypso’s fruity and herbal profile, creating a well-rounded beer with depth and complexity.

Calypso Hop Substitutions:

If you’re unable to find Calypso hops or would like to experiment with similar hop varieties, consider the following substitutions:

  • El Dorado: This American hop variety offers strong tropical fruit flavours, such as pineapple and mango, along with some citrus and stone fruit notes. It can be a suitable alternative to Calypso, although the flavour profile may slightly differ.
  • Galaxy: An Australian hop variety known for its intense passionfruit, citrus, and peach flavours. While it may not have the same herbal and minty notes as Calypso, it can still provide a fruity and complex hop profile.
  • Azacca: This American hop variety offers a mix of tropical fruit, citrus, and orchard fruit flavours, along with some grassy and piney notes. It can be a suitable alternative to Calypso in terms of fruity complexity.
