The best keg for home brewers is frequently referred to as a Cornelius Keg (or Cornie). They are portable, easy to clean, and well suited for serving beer because they can tolerate high pressures. They are particularly well suited for serving lagers since they can be adequately carbonated to a significantly greater pressure than regular plastic kegs. They function by injecting CO2 into the IN valve, which feeds onto the top of the beer through a brief dip tube. This pushes the liquid through the Out valve and up a longer dip tube that feeds from the keg’s bottom. When installed, a rapid disconnent fitting goes onto the valve and opens it, allowing Co2 to be injected.
